Bean Salad
This recipe is full of flavor and is a great leftover salad. Keeps
well in the fridge. This recipe is pretty inexpensive too!
Ingredients
- 1 (16 ounce) can dark red kidney beans, drained
- 1 (14.5 ounce) can cut green beans, drained
- 1 (14.5 ounce) can cut golden wax beans, drained
- 1 cup sliced fresh mushrooms
- 1/2 cup chopped red bell pepper
- 2 tbls minced red onion
- 1/4 cup canola oil
- 1/4 cup olive oil (note: you can use 1/2 cup of either only depending
on your taste)
- 2 tbls white wine vinegar
- splash of balsamic vinegar
- 1 tbls Dijon mustard
- 2 tbls greek seasoning
1. combine the first 6 ingredients
2. whisk together the oil, vinegar, mustard, and greek seasoning.
Pour over the bean mixture. Cover and chill for 4 hours. Stir occassionally.
